Winemaking Supplies: Chemicals and Additives


Acid Blend:
This is a mixture of Tartaric, Malic and Citric acids in the ratio of 40-40-20. These are the natural acids in ratio in grapes. It is often called for in recipes, but equal weights of Tartaric or Citric alone will give the same results.

Ascorbic Acid:
USP quality. This acid is an antioxidant which has been used as a partial substitute for sulfur dioxide, but with mixed results. It often helps if used ahead of copper sulfate in treating a wine with reduced sulfur problems. It helps to convert disulfide to mercaptans that are active with copper sulfate.

Amylase Enzyme:
An alternative to Pectin Enzyme more often used by brewers to aid in clarification. Has a long shelf life and comes in powdered form. Recommended use is _ tsp. per gallon.

Anti-Foam:
This is a silicone oil emulsion that reduces surface tension, thus reducing foaming. It works best in a full container with minimum surface area. Use 5 drops before fermentation becomes violent, then two or three drops as necessary to help reduce foaming. Shelf live is one year.

Bentonite:
This is a broad spectrum clarifying agent of montmorillonite clay that attracts positively charged particles. It is recommended for protein instability. Normal use is 2 grams per gallon unless added during fermentation, 5 grams per gallon is used then. It should be dispersed in a small amount of water before being added to the wine batch. Be sure to rack at least once before attempting to filter.

Campden Tablets:
.55g each equaling 48% SO2. One tablet per gallon yields about 75 ppm. 1 tablet per two gallons is recommended. Tablet must be crushed before being added to wine.

Calcium Carbonate:
USP quality precipitated chalk, used to reduce acidity in wine or must. It reacts preferentially with Tartaric acid rather than Malic acid, so it should not be used to lower acidity by more than .3%-.4%. 2.5 grams per gallon will reduce acidity by 0.1%.

Citric Acid:
USP quality, it is found in grapes as a minor acid as opposed to other fresh fruits. Most of this acid is lost during fermentation so adding about 1 gram per 10 gallons will help prevent iron haze. It may also be used as a substitute for Tartaric acid in increasing acidity after fermentation is complete. 3.7 grams per gallon will increase acidity about 0.1%.

C-Brite:
A proprietary chlorine based cleanser/sanitizer for all surfaces that may contact your wine. This is a "no rinse" sanitizer, recommended use is one packet per 2 gallons of water.
