|
Potassium Bicarbonate:
This food grade additive is used to reduce acidity. Avoid using if pH is above 3.5 or if you need to reduce more than about 0.3%. It may be used close to bottling if cold stabilization is performed afterward. This compound will cause a greater rise in pH than Calcium Carbonate for an equivalent reduction in acidity. 3.4 grams per gallon will lower acidity about 0.1%.

Theoretically it is 57% SO2. 1/4 tsp. per 5 gals yields about 40-45 ppm SO2. One gram per gallon equals roughly 150 ppm SO2. Keep in dry place, shelf life is 2 years.

Potassium Sorbate:
This is a yeast inhibitor for use with wine that has residual sugars to prevent refermentation. DO NOT USE if a malolactic fermentation is planned or possible since a distinct off odor can result. This can be avoided if potassium metabisulfite is used with the sorbate additive. Normal use is 1 gram per gallon. Store out of direct sunlight. Shelf life is 9 months.

Rapidaze Ex Color:
This is a pectin enzyme which is effective in extracting maximum color during red wine fermentation. It comes in 100 gram sealed packets and usual use is 1 to 5 grams per 25 gallons of must. It is only effective if added while wine is still in contact with skins.

Tartaric Acid:
This is, along with Malic Acid, the other signature acid present in grapes. Low acid grapes will benefit from its addition, clearing faster and keeping better. It should be added to any wine with less 0.5% total acidity or one with a very high pH. As a rule of thumb, 4 grams per gallon will increase titratable acid by 0.1%.

This consists of insoluble fraction of whole yeast cells. These materials supply lipids and sterols to the fermenting yeast and absorb fatty acids which may cause sluggish fermentation. Their presence will improve malolactic fermentation and vinegar fermentation. Normal use is .5 to 1 gram per gallon. Do not use more than 3 g./gal.

Xpress:
This is a color and tannin enhancer for red wines. It is derived from California grapes and is added to wine to adjust color and tannins. It will deepen and improve color of any red or rose wine and the increase in tannins will impart a sense of additional body. It doesnt improve every wine, but it often helps. The recommended use is 1 to 4% by volume. It should be kept in filled glass bottles and stored as wine is.
